Edgar Cayce, born in 1887, was a psychic, a ‘medical clairvoyant’, and was also considered the 'father of holistic medicine’.

Cayce was one of the first to promote the idea of the impact our mind has on our bodies and health. He was able to psychically diagnose illnesses in people, and prescribe the correct foods and combinations to heal them.

Amazingly, the majority of foods that Cayce prescribed were in line with today’s popular ‘Mediterranean Diet’.

Edgar Cayce was an advocate for eating whole, locally grown, preservative-free foods, whole grains, not processed, more fish and fowl than red meat, more leafy green vegetables, a diet composed of 80% alkalinity to 20% acidity.

Generally speaking, most fruits and vegetables are alkaline, and most grains, starches, sweets and meats, produce acid.

An acidic body is susceptible to many illnesses as well as cancers.

All of these foods and ideas will boost healing, and are popularized by the Mediterranean Diet.

Extra Virgin Olive Oil

Olive oil plays an important part in the Mediterranean diet.

Studies have shown for years that people that have this type of diet live longer and have a better quality of life.

Olive oil can be added to salads, with or without a good vinegar, and is really good sprinkled on slightly cooked vegetables.

There is evidence that suggests that continued use of extra virgin olive oil can help to reduce your risk of cancer significantly.

It contains nutrients that support brain and heart health. The Omega-3s make blood flow easier, reducing the risk of heart disease.

It can also help to reduce the aggressiveness of tumors that do appear, thanks to the level of monounsaturated fats (also found in fatty fishes, nuts and avocados) that are found in the oil.

Your heart will also benefit from this oil as it has been shown to help reduce the risk of atherosclerosis too.

Olive oil can also speed the healing of burns and wounds. It keeps the skin and hair healthy and smooth.

Olive oil also makes for a great natural sunscreen, used around the world for thousands of years.

You must buy a good quality olive oil, though, because a lower quality will not have the anti-inflammatory and antioxidants that are prized with good oil.


Olives contain a huge amount of health benefits too. They are a great source of fiber, Vitamin E, and antioxidants.

Olives have been shown to prevent blood clots, control blood pressure, and reduce cholesterol.

They are rich in minerals, vitamins, amino acids, iron, and polyphenols, which help our brains. 

Olive trees are some of the oldest known harvested trees, dating back more than 8000 years. Olive trees are slow-growing and meticulous, but they live long lives, up to about a hundred years. Green olives ripen into black olives, there are no green olive trees! 

Most of our domestic olives here in the U.S. come from California, but the Mediterranean area and Latin America are big olive growers.  

There are many, many types of olives for healthy eating, including the black Mission olives that are common here. Olives come with some great names, and great flavors like Kalamata, Manzanilla, Alfonso, and Nicoise.

Red wine is another important food that is found in this diet. While many people may write off red wine off as just alcohol, it actually contains polyphenols and resveratrol, both important anti-oxidants.

These have been shown to help to improve the health of the body when they are used in moderation.

A glass of wine each day can help you to reduce your LDL cholesterol levels naturally. This is the bad cholesterol that leads to serious health concerns.

The antioxidants in red wine soak up the damaging free radicals that age us.

Whole Grains

Whole grains are also important Mediterranean diet foods.

Studies have shown that whole grains are critical for a person’s overall health. Those who consume enough whole grains in a day, 4-6 servings a day, have a significantly reduced risk of heart disease and even Type 2 diabetes.

Many forms of cancer are also easily avoided when you are getting proper amounts of fiber in your diet through the consumption of whole grains.

Grains need to be Whole and Natural, Not Processed bread, cereal and pasta products.

Best to eat bread plain or dipped in olive oil, never in butter or margarine that contain saturated or trans fats.


Nuts are another part of a healthy Mediterranean Diet. Nuts get a bad rap sometimes for being high in fat, but most of this fat is healthy fat.

Nuts provide heart healthy fats, protein, vitamins and minerals.

A handful of RAW nuts a day are healthy, but stay away from candied or honey-roasted or even salted!

Nuts can lower cholesterol, keeping your arteries clear. Even our government is beginning to tout the nutritious benefits of nuts!

Amazing Vegetables

Vegetables like tomatoes are also popular Mediterranean diet foods.

Tomatoes contain high levels of lycopene. It is believed that this antioxidant is essential for the health of your body.

Tomatoes can help to lower your risk of cardiovascular disease and men will benefit from the boost it can give to prostate health.

Tomatoes should be included in each of the meals that you prepare as part of this diet.

Cucumbers are another vegetable to consider. They are packed with essential vitamins and minerals.

They can reduce your risk of cancer, inflammation in the brain, boost digestive health, and improve heart health.

Cucumbers are a low calorie, nutrient rich food, and provide a refreshing snack during the day.
